Yes, the game lasts until everybody is bored and tired... at least in 4-player games.

Unfortunately, laying all the bricks at once is not enough in 3- or 4-player games ...
The issue lies in the fact that there are too many roofs. Players receive 18 roofs (+golden ones) in 3-player games, and 24 roofs in 4-player games (+golden ones), more than the properties (16)! So often the game lasts for the 16th building and when few properties are still empty, it´s hard to stop there and play the golden roof .
(Not to mention the impossibility of playing a golden roof...)

It works better combining the house rule you've mentioned with reducing the number of roofs per player, say, to a total of 12 roofs (+golden ones).
